Ingredients for Mickey Rice Krispie Treats

  • Crisped rice cereal
  • Marshmallows
  • Butter
  • Eggs
  • Cream of tarter
  • Powdered sugar
  • Almond extract
  • Teal and black gel food coloring

How to Make Mickey Rice Krispie Treats

First I whipped up a fresh batch of rice krispie treats (see classic recipe below) in a large jelly roll pan. These are thinner than I would normally make and I also used another pan to press down on top to try to condense the treats as much as possible, to make them ideal for the snowflake-shaped rice krispie treats! Once those were set up, I used a Mickey cookie cutter to cut out the Mickey-shaped treat.

How to Make Royal Icing

Next up, the icing! Now at this point you could just use candy melts like I do with many treats, but if you’d like to use royal icing (which is delicious), follow these steps.

First, using a standing mixer, beat the egg whites, cream of tarter, powder sugar, and almond extract until combined, smooth and stiff with peaks, about 7 minutes. Scoop 1/2 cup of the icing into a bowl and mix in a few drops of the black gel food coloring. Using the remaining icing, mix in a few drops of the teal food coloring until combined.

Scoop the black icing into 1 piping bag. Scoop some teal icing into the second piping bag. Mix in 2 tbsp of water into the remaining teal icing and pour into the squeeze bottle.

How to Decorate Sally Rice Krispie Treats

Line up the rice krispie Mickey heads on a waxed paper lined counter. Outline the Mickey head with the teal icing.

Set aside for a few minutes to allow to dry. Once the outline has dried. Squeeze some of the icing on the center of the Mickey head. Use a butter knife to spread the icing on the Mickey head. Set aside for the icing to firm up.

Using the black icing make the black lines. Allow to slightly dry.

Working on one line (stitch line at a time) begin to make the stitches. Criss-cross some or/and make small lines.

Repeat until all of the stitches have been completed. Set aside to dry.
